heather Lieber, MS, RDN, CD
Heather spent her first five years as a dietitian working for a specialty grocer in Utah, Harmons Grocery. This role included individual nutrition counseling, teaching cooking classes, leading store tours, nutrient analysis of products, and hosting community presentations and events.
Seeing a wide variety of clients, Heather noticed one common pitfall: getting caught in the extremes. With questionable nutrition advice coming from every person and direction possible, Heather felt called to grow her own practice to help people understand and implement nutrition in a more moderate, individualized, and reputable way. In Goldi’s services, you’ll see just that.
Heather also teaches a graduate level course, “Communication Techniques in Dietetics” to soon-to-be dietitians on how to communicate nutrition in innovative, audience-focused ways.
Heather’s formal education includes a Bachelor of Science degree in Nutrition and Dietetics through Utah State University, and a dietetic internship in the St. George area. She has also received her Master of Science in Nutrition and Integrative Physiology from the University of Utah, where main project focused on incorporating positive psychology concepts into nutrition counseling to facilitate lasting behavior change.
Along with Registered Dietitian Nutritionist, Heather claims the following titles: cuisine explorer, recipe experimenter, kitchen mess maker (says her husband), road runner, and mountain biker/climber/hiker.
Goldi’s story
“With confusing and sometimes contradicting nutrition information in the media, it’s hard to know where to turn and what to believe. The truth is, there’s no one perfect answer. Nutrition is a science, and science is always evolving as new research emerges. Even a well-established nutrition principle in the research may not be appropriate for someone with a specific condition or circumstance. For these reasons, nutrition can be overwhelming. Goldi is here to help.
In thinking about my approach with clients, I can’t help but think of the intruder of the three bears: Goldilocks. She wanted her porridge, chair, and bed just right. Not too hot, not too cold. Not too hard, not too soft. Not too tall, not too short. With my clients, I utilize an approach to nutrition and food that is not too structured, not too vague. Not too foreign, not too familiar. Not too lofty, not too stagnant. And so…this business “Goldi” was born. An approach to nutrition where we don’t buy into extremes, get distracted by flashy headlines, or set unrealistic goals. An approach where small, sustainable changes for the better have an impact over time.
